Make it Monday: No-bake energy bites

GREENVILLE, N.C. (WNCT) – Getting back to the groove of work, school and weekly responsibilities is sure difficult, especially after a long weekend spent with family and friends.

In this week’s Make It Monday, we’re showing you a healthy energy bite recipe packed with protein and sweetened with honey. You can adapt this recipe to your own personal needs, like making it gluten-free or organic.

These bites don’t need to be baked yet still taste just like cookies.

Here’s what you’ll need:

– 1 cup oats

– 2/3 cup coconut flakes

– 1/2 cup peanut butter

– 1/3 cup honey

– 1/4 cup cocoa powder

– 1 tablespoon chia seeds

– 1 teaspoon vanilla extract

Part of the reason these are considered energy bites is because of the chia seeds. They’re small ovals that are rich in Omega-3 Fatty Acids, B Vitamins, Calcium, Iron and other minerals.

Add all your ingredients into a big mixing bowl and take a spoon to combine. Next, put the mixture in the fridge and wait about an hour.

When it’s time, take it out and use a spoon and your hands to form the mixture into balls.

Place them on a plate or container and keep them in the fridge until you’re ready to eat them.
